I'm a real oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of these yet? (? You'll find all my oatmeal cookie recipes right there!) They are a few of the most popular recipes in my site because they taste very sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined flour or sugar!
So you'll start with whole wheat bread (or gluten free, if you would like ) and instantaneous oats (such as those... or these for a gluten free version!) . Immediate oats are smaller and thinner than traditional rolled oats, also you may see them at canisters right next to those traditional oats in the grocery shop.
I probably sound like a broken record by now... But cause I ? you and want your cookies to turn out perfectly plump and soft, I'm reminding you ... Measure your yogurt and bread properly, using this technique or even a kitchen scale! (? That is the one I have and adore. Too much of either ingredient is likely to make your cookies taste cakey or dry, rather than chewy. This is particularly true of the oats--that they behave like little sponges and soak up plenty of moisture out of your cookie dough!

Watch those bananas? And all of those brown spots? If it comes to baking with bananas, brown = amazing! I ? extra speckly bananas cause they have a lot bright, bold flavor--and also extra sweetness! That's the minimum amount of brown that I suggest. More is better!
The remainder of the cookie dough's sweetness comes in a different pure ingredient... Pure maple syrup (such as that!) . If you allow the raisins sit mixing together the cookie dough, this small hint hydrates them so they're tremendously juicy--and my explanation that makes a difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal cookies are soft, chewy, and full of banana flavor! The familiar comfy spices and plump blueberries make these even more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the fridge --should they last long!
1 cup (100g) instant oats (fermented if essential and quantified like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like that )
1 1/2 tsp baking powder
1/4 teaspoon salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, dip the cookie dough into 15 rounded scoops onto the sheet, and flatten to the desired depth and width using The Easiest 2 Ingredient Banana Oatmeal Cookies Liezl Jayne a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It is extremely important to measure both the oats and flour properly using this method or even a kitchen scale. (? That is exactly the one I own and adore!) Too much of either could dry out the cookies and abandon them cakey rather than chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They arrive in huge canisters, exactly like conservative oats. They are not the ones in the small flavored packets of oatmeal. To make your own, include the same quantity of conservative yogurt into your food processor, and pulse 10-12 days or until the oats will be approximately 1/4 into ? of the initial size.
For the fermented flour, I suggest the following mix: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, two tbsp (15g) brown rice bran, also 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as this one!) Will also work, if quantified like this.
If your raisins are old, drier, and not very plump or juicy... Add them into a microwave-safe bowland pour water on top until they're totally coated. Seal plastic wrap across the top, and microwave the bowl on high for 1 second. Should you allow the raisins sit while mixing together the cookie dough, this small hint hydrates them so they're really soft and juicy!
